Chickpea Curry


INGREDIENTS




(For four people)

2 onions
150g of mushrooms
4 garlic cloves
1 teaspoon of capsicum powder
1.5 teaspoons of turmeric
1.5 teaspoons of paprika
1.5 teaspoons of cumin powder (fresh ground if possible)
1.5 teaspoons of coriander powder or use fresh coriander
500gm of organic chick peas which have been left to soak overnight
1kg of tomatoes
1 teaspoon of garam masala
Salt (rock salt preferably)
Olive oil

PREPARATION

Cut the onion into strips, the mushrooms too. Peel the tomatoes and chop into tiny pieces.

Heat the onions for 5 mins, add the mushrooms and heat for 5 mins more and continue heating on a low heat till both are soft.

Add the spices and leave for 3 more mins.

Add the chick peas, tomatoes and mix well and wait till the chick peas are soft.
