Raw Chocolate Cheesecake

Ingredients of Crust (same as for raw pumpkin pie)

1 1/2 cups almonds
2/3 cup raisins
1/4 cup shredded coconut
1-2 teaspoons of vanilla

Grind the almonds into a flour in a food processor.Add the raisins and continue grinding until broken down.Add the coconut and vanilla. Blend again to incorporate.Add another 1/2 - 1 teaspoon water if needed to keep the mixture held together when pressed in your hand.Press into the bottom of a pie plate or mini tart pans. 

Ingredients of Filling

2 cups cashews nuts
3 tablespoons honey
2/3 cup mineral water
2/3 cup raw cocoa powder
1 tablespoon vanilla
1/8 teaspoon rock salt
1/3 cup melted coconut oil

Method

Blend the cashew nuts, honey, mineral water, vanilla and rock salt until smooth in a blender.Add the coconut oil. Blend to incorporate.Add the cacao powder last and blend in again.The mixture should be thick by now.Pour over the crust and set in the fridge for at least 12 hours. You should now have a delicious raw chocolate cheesecake :)
