Tofu Cheesecake Recipe


Crust


 

Ingredients: 

2 cups almond flour (ground almonds)

Pinch rock salt

2 tablespoons coconut oil

1 egg


Method:

Place all the ingredients into a food processor and mix. Then press the dough into a pie dish and bake at 180 degreees Centigrade for 10 minutes or until crust just begins to brown.





Tofu cheesecake




Ingredients:

2 packets tofu

1 teaspoon vanilla extract

1 pinch of rock salt

1 tablespoon of coconut oil

2 tablespoons of lemon juice

2 tablespoons of organic honey or molasses


Method:

Place all of the ingredients into the food processor and mix until the mixture is smooth. Pour over the pie crust in the pie dish. Bake for 30 minutes or until slightly brown at 180 degrees Celcius. Remove from the oven until cool and then refrigerate until solid - at least 2 hours. Note that the longer it is in the fridge the tastier it is. 12 to 24 hours is ideal.
