Millet and Leek Cake

 

Ingredients:

2 leeks or 1 cauliflower and 2 medium sized onions
1 cup of millet
3 cups of water
1 tablespoon of vegetable stock 


Method:

1) Chop the leeks or cauliflower and onions very finely. Afterwards sauté them with a tiny bit of olive oil and a tiny pinch of salt for 10 minutes.

2) Add the millet and sauté for a few more minutes.

3) Add the water.

4) Once boiling, lower the heat, cover and cook for another 20 to 25 minutes.

5) Mix well and add the mixture to a bread pan. Allow to cool.

6) Spread pumpkin seeds or sunflower seeds on top and place in the oven at 180 degrees Centigrade for 10 to 15 minutes until the seeds start to brown.
