Steamed Adzuki Bean Vegeburgers

Ingredients

  • 500g adzuki beans
  • 1 cup mixed basmati brown, red and black rice
  • 2 cups vegetable stock
  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, crushed
  • 2 teaspoons of ground coriander
  • 1 teaspoon of ground cumin
  • 1 fresh green chilli, chopped
  • 2 free range eggs
  • 5 wholemeal chapattis chopped into small pieces
  • 12 teaspoon salt
  • 12 teaspoon pepper

Method

  • Leave the adzuki beans to soak overnight. Cook the adzuki beans in a pressure cooking waiting for 4 whistles and leaving for half an hour before opening. Drain and keep to the side.
  • Leave the rice to soak in water overnight. Cook the rice in the vegetable stock for 20 minutes or until all the stock is absorbed and the rice is ready. Set  to the side.
  • Heat 1 tablespoon of olive oil in a pan to fry the onion, garlic, and spices for 5 minutes.
  • In a bowl add the beans, the rice, salt, pepper, chopped chapattis and eggs. Mash all the ingredients together. Cover and chill in the fridge for 1 hour until firm.
  • With wet hands mold the vegeburger mixture into several round shapes.
  • Brush each vegeburger with oil and steam in a steamer for 10 to 20 minutes until hard. Serve with salad and chutney.
