Black Eyed Peas, Green Pepper and Green Beans
- 1 tablespoon extra-virgin olive oil
- 1 medium onion, chopped
- 2 large cloves garlic, finely chopped
- 3 cups vegetable stock
- 3 bay leaves
- 2 cups black eyed peas
- 1 green pepper, sliced
- 100 to 150 grams green beans
- 1/2 teaspoon rock salt or to taste
- 1/2 teaspoon freshly ground pepper or to taste
- 1 green chilli, chopped
Method
- Heat the olive oil in a large saucepan over a medium heat. Add the onion and stir for around 5 minutes until the onion is soft. Add the garlic and cook for 1 more minute. Add the vegetable stock and bay leaves. Bring to the boil. Stir in the green pepper, green beans and black eyed peas.
- Reduce the heat to a simmer, stirring occasionally, for 20 minutes. Add salt, pepper and green chilli. Simmer until all the ingredients are soft. Serve with brown rice.
