Black Eyed Peas, Green Pepper and Green Beans 


Ingredients


  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 2 large cloves garlic, finely chopped
  • 3 cups vegetable stock
  • 3 bay leaves
  • 2 cups black eyed peas
  • 1 green pepper, sliced
  • 100 to 150 grams green beans
  • 1/2 teaspoon rock salt or to taste
  • 1/2 teaspoon freshly ground pepper or to taste
  • 1 green chilli, chopped

Method


  1. Heat the olive oil in a large saucepan over a medium heat. Add the onion and stir for around 5 minutes until the onion is soft. Add the garlic and cook for 1 more minute. Add the vegetable stock and bay leaves. Bring to the boil. Stir in the green pepper, green beans and black eyed peas.
  2. Reduce the heat to a simmer, stirring occasionally, for 20 minutes. Add salt, pepper and green chilli. Simmer until all the ingredients are soft. Serve with brown rice.
