Chapatti and Red Kidney Bean Pizza

Ingredients

100g mozzarella or feta cheese
300g red kidney beans
1 green pepper sliced
2 sliced tomatoes
6-8 Chapattis
2 tablespoons olive oil
1 cup chopped tomatoes
2 tablespoons chopped fresh basil
Pinch of oregano
Half a small onion, sliced
4 cloves of garlic, peeled
Rock salt to taste
Black pepper to taste
Parsley to garnish


Sauce Method:
Place all the chopped tomatoes in a blender together with the peeled garlic, pepper, salt, oregano and basil. Once blended heat in a saucepan until thick.

Chapatti Pizza Method:
Put a little olive oil in a pan, heat and then add the chapatti. Add the tomato sauce, then cheese, onion slices, tomato slices, green pepper slices and red kidney beans. Cover the pan and continue to heat on a low heat until the cheese has melted. Repeat for all the 6-8 chapattis. Garnish with parsley and enjoy.
