Apricot Glazed Tofu with Seeds
Ingredients
- 1 block tofu
- 3 tablespoons apricot jam (made with cane sugar)
- 1 tablespoon olive oil
- 1/2 tablespoon apple cider vinegar
- black pepper and rock salt to taste
- 1/8 cup of mixed seeds (sunflower, sesame and pumpkin)
Method
- In a bowl, mix together the jam, vinegar, rock salt and black pepper. Stir.
- Shallow fry the tofu for a few minutes with olive oil.
- Add in the mixture of jam, vinegar, salt and pepper.
- Once brown add the mix of seeds to decorate.
