Pomegranate Salad
Ingredients
- 15 red cherry tomatoes, diced
- 6 medium tomatoes, diced
- 1 large pomegranate, seeds removed
- 1 red pepper,diced
- 1 red onion, finely diced
- 3-4 cloves garlic, crushed
- 2 teaspoons white wine vinegar
- 1 tablespoons molasses or raw cane sugar
- 3 tablespoons olive oil, plus extra for pouring over at the end
- 1/2 teaspoon rock salt
- 1 tablespoon small oregano leaves
Method
- Mix together all the tomatoes, the red pepper, and the onion in a large bowl and put aside.
- In a small bowl, whisk together the garlic, vinegar, molasses (or cane sugar), olive oil, and salt until well mixed. Pour this over the tomato mixture and stir.
- Arrange the tomato mixture on a plate. Sprinkle the pomegranate seeds and oregano over. Finally add a drizzle of olive oil.
