Potato Curry
Ingredients
- 3 teaspoons olive oil
- 1 teaspoons cumin seeds
- pinch of turmeric
- 1 teaspoon ground coriander
- rock salt to taste
- 3/4 teaspoon mustard seeds
- pinch of cayenne pepper
- 6 medium sized potatoes, peeled and diced
- 2 cups water
- 2/3 cups fresh green peas
Method
- Heat the olive oil in a shallow frying pan over a medium heat and mix in the cumin, turmeric, coriander, salt, mustard seeds, and cayenne pepper.
- Place potatoes in the pan and stir to evenly coat with the olive oil. Cook for 10 minutes, stirring frequently.
- Pour water into the pan. Reduce the heat to low and simmer for 20 to 30 minutes until the potatoes are tender.
