Potato Curry

 
Ingredients


  • 3 teaspoons olive oil
  • 1 teaspoons cumin seeds
  • pinch of turmeric 
  • 1 teaspoon ground coriander 
  • rock salt to taste 
  • 3/4 teaspoon mustard seeds
  • pinch of cayenne pepper 
  • 6 medium sized potatoes, peeled and diced 
  • 2 cups water
  • 2/3 cups fresh green peas
Method 
  1. Heat the olive oil in a shallow frying pan over a medium heat and mix in the cumin, turmeric, coriander, salt, mustard seeds, and cayenne pepper. 
  2. Place potatoes in the pan and stir to evenly coat with the olive oil. Cook for 10 minutes, stirring frequently.
  3. Pour water into the pan. Reduce the heat to low and simmer for 20 to 30 minutes until the potatoes are tender.
