Red Lentil Dhal

 
Ingredients 

  • 2 tablespoons olive oil 
  • 1 cup onions, finely chopped 
  • 3 tablespoons ginger, minced 
  • 1 chilli
  • 1 cup red lentils 
  • 2 teaspoons ground coriander 
  • 2 teaspoons ground cumin 
  • Pinch of turmeric 
  • 1 teaspoon ground ginger 
  • 1 cup chopped tomatoes 
  • 3 tablespoons coriander
  • Rock salt to taste 
Method 
  1. In a large saucepan heat the oil and sauté the onion until softened. Add potato, and sauté for about 5 minutes. Add minced ginger and garlic. Stir and reduce the heat to low.
  2. Finely dice the chilli. Add chili, lentils, coriander, cumin, turmeric and ground ginger to the pan. Stir until the lentils are well coated with oil. Add the chopped tomatoes and 4 cups of water. Increase the heat to bring to a boil, then reduce the heat until the mixture is simmering. Cook the uncovered until the lentils and potatoes are soft. Stir occasionally for about 25 minutes.
  3. Season to taste with the rock salt and continue to simmer until the mixture has thickened for about 10 minutes.
  4. To serve, place the dal in a serving bowl and sprinkle chopped coriander on top
