Red Lentil Dhal
Ingredients
- 2 tablespoons olive oil
- 1 cup onions, finely chopped
- 3 tablespoons ginger, minced
- 1 chilli
- 1 cup red lentils
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- Pinch of turmeric
- 1 teaspoon ground ginger
- 1 cup chopped tomatoes
- 3 tablespoons coriander
- Rock salt to taste
Method
- In a large saucepan heat the oil and sauté the onion until softened. Add potato, and sauté for about 5 minutes. Add minced ginger and garlic. Stir and reduce the heat to low.
- Finely dice the chilli. Add chili, lentils, coriander, cumin, turmeric and ground ginger to the pan. Stir until the lentils are well coated with oil. Add the chopped tomatoes and 4 cups of water. Increase the heat to bring to a boil, then reduce the heat until the mixture is simmering. Cook the uncovered until the lentils and potatoes are soft. Stir occasionally for about 25 minutes.
- Season to taste with the rock salt and continue to simmer until the mixture has thickened for about 10 minutes.
- To serve, place the dal in a serving bowl and sprinkle chopped coriander on top.
