Spicy Tofu Hotpot
Ingredients
- 400g Tofu
- 2 teaspoons olive oil or sesame oil
- 2 tablespoons grated ginger
- 6 cloves garlic, finely chopped
- 4 ounces shiitake mushrooms, steamed and sliced
- 1 tablespoon raw cane sugar
- 4 cups vegetable broth
- 4 tablespoons tamari sauce
- 1 chilli finely chopped
- 1 bunch of pak choi chopped or 1 and a half aubergines chopped into cubes
- 150g soba (buckwheat) noodles
- 1 bunch fresh coriander, chopped
Method
- Cut tofu into small cubes.
- Heat the oil on a pan over a medium heat, add the ginger and garlic, cook stirring for about 1 minute.
- Add the shiitake mushrooms and tofu and cook until slightly soft, stir in the cane sugar, vegetable broth, tamari sauce and cover and bring to a boil.
- Add the pack choi or aubergine, cover and simmer until soft. Raise heat to high and add the noodles, cook covered for a few minutes until the noodles are tender. Then remove from the heat and mix in the fresh coriander.
