Vegetarian Black Bean Soup

 
Ingredients
  • 200g black beans soaked overnight
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 fresh chillis chopped
  • 1 tablespoon oregano
  • 1 teaspoon cumin
  • 1/2 teaspoon rock salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic
  • 3 cups water
  • 2 bay leaves
Method
  1. Cook the black beans in a pressure cooker for 5 whistles.
  2. Meanwhile heat the olive oil over a medium heat. Add the onion, stir and cook until translucent for about 5 minutes.
  3. Stir in the chili, oregano, cumin, salt, pepper, and garlic, and cook for another 1 to 2 minutes, until you can smell everything.
  4. Add the black beans, stir, and cook for 1 to 2 minutes more.
  5. Stir in water and bay leaves. Bring the soup to a boil. Reduce the heat and simmer for around 20 minutes until ready.
