Green Apple and Celery Salad with Mustard Vinagarette
Ingredients:
- Juice of one fresh lemon
- 1 tablespoon Dijon mustard
- 2 teaspoons honey
- 2-3 tablespoons extra virgin olive oil
- Juice of one fresh lemon
- 3-4 celery sticks with leaves
- 2 large apples, chopped
- 1/4 cup mixed seeds (sunflower, pumpkin and sesame)
- Method:
- 1. Whisk the first 4 ingredients in small bowl. Season the vinaigrette with rock salt and pepper.
- 2. Trim the celery leaves and chop. Thinly slice the stalks diagonally. Place the celery pieces in a bowl of cold water.
- 3. Drain the celery and pat dry with a kitchen towel. Combine the celery, celery leaves, apples and seeds in large bowl. Add the vinaigrette and toss. Season salad again to taste with rock salt and pepper.
