Thai Cucumber Salad


Ingredients

3 large cucumbers, halved lengthwise and cut into small slices
1 tablespoon rock salt
1/2 cup apple cider vinegar 

1 teaspoon honey

1 to 2 chillis seeded and chopped 

1/4 cup chopped coriander
1/2 cup chopped peanuts


Method

1. Toss the cucumbers with the rock salt into a colander and leave in the sink to drain for 30 minutes. Rinse with cold water, then drain and pat dry.

2. Whisk together the honey and vinegar in a small bowl until the honey has dissolved. Add the cucumbers, chillis and coriander. Toss to combine. Sprinkle chopped peanuts on top before serving.
