Apple & Cinnamon Porridge



Ingredients

(serves 2)
  • 1 tbsp coconut oil
  • 2 apples (peeled & diced) 
  • 2-3 tbsp raisins
  • 1 tsp ground cinnamon 
  • 2 tbsp honey
  • 2/3 cup rolled oats
  • 1 1/2 cup water 
  • optional: shredded coconut & toasted almonds to serve

Instructions
Heat the coconut oil in a medium sized pan. Add apples, raisins and cinnamon and cook, stirring frequently, for around 2 mins until apples and raisins are just starting to soften. Add honey or other natural sweetener if desired. 

Add oats and water and gently bring to a boil. Simmer, stirring frequently until the porridge has thickened. Separately, gently toast almonds in a small frying pan until they are golden brown. 

Serve with shredded coconut or toasted almonds, if desired.
