Fernanda's Apple Pie
You will need a 10 inch cake tin or glass
dish.
Ingredients
Base:
- 30g coconut oil or sunflower oil
- 125g brown rice flour
- 50g ground almonds
- 2tbsp chia seeds (pre-soaked in water for at least 2 hrs, to make chia egg)
- 30g raisins (pre-soaked at least 4 hours or the night before)
Puree:
- 4 apples (cubed)
- 30g raisins (or to taste for sweetness – pre-soaked)
- 2 orange (juiced)
- 2 tbsp vegetable gelatine
- 50g coconut flakes
- To decorate:
- 2 apples (sliced thinly on top)
- Coconut flakes
- cinnamon
Instructions
1.
Preheat oven to 180c. Place
baking sheet on a tray and add the thinly apples for the decoration with the
orange juice

In a blender add all the
soaked raisins and blend to make a puree and set aside in a small bowl. Preheat
the oven to 180c.

In a large pot add the
cubed apples and orange juice for the puree. Cook slowly on low heat for up to
2 hours until it reduces to a thick puree.

Meanwhile, in a large bowl
add all the base ingredients including half of the pureed raisins. Combine well
with hands to make a dough.
5.
Place baking sheet in a
10-in cake and add the dough. With your hands flatten the dough to make the
base. Use a bowl of water if necessary to keep your hands wet, preventing the
dough from sticking.
6.
Place the base in the oven
for approximately 10 minutes.
7.
Place baking sheet on a
tray and add the thinly apples for the decoration and cover with foil. Place in
the oven for between 25 – 30 minutes.
8.
Combine the gelatine with a
little bit of cold water to form a paste. When the puree is ready add the
gelatine paste with the raisin puree and coconut flakes to sweeten. Mix well.
9.
Spread the puree on top of
the base evenly. Decorate neatly with the thinly slices apples. Sprinkle with a
little cinnamon and coconut.
