Fernanda's Special Mixed Grain Rice



Ingredients 
  • 300g Mixed grain basmati
          - 100g Brown rice
          - 100g Red rice
          - 100g Black rice
  • 1 tsp Cumin seeds
  • 1 tsp Coriander seeds
  • 3 Red onions (thinly sliced)
  • 1 Leek (thinly sliced)
  • 30g Cashews
  • Salt
  • Olive Oil
  • 550ml Vegetable stock or water
Instructions

1. First, put the rice in a colander and wash the rice thoroughly.
2. In a large pot add a couple of tablespoons of olive oil with both the cumin and the coriander seeds. Place on a medium heat and fry for a couple of minutes until fragrant. make sure to stir frequently.
3. Add leeks and onions. Fry for a couple of minutes until translucent and then add the grains of rice.
4. Add a generous pinch of salt and begin to toast the rice in the pot for around 10-15 minutes, stirring every few minutes to make sure it doesn't burn.
5. Meanwhile, prepare the stock or boil some water. Once the rice has been toasted add the stock or water and bring again to boil on high heat.
6. Leave to boil for around 5 minutes then lower to medium heat. Cover with a lid and cook for a further 10-15 minutes until there is no more water. Stir every now and then to make sure that it doesn't stick to the bottom.
7. While the rice cooks, toast the cashews in a separate frying pan. Place the pan on the low heat and cook for a couple of minutes stirring constantly.
8. Add cashews to the rice and mix well.
