Carob Walnut Energy Balls

Ingredients
- 1 cup Old fashioned oats (or about 3/4 cup oats flour)
- 2 tbsp Carob powder (or Cacao powder)
- 1/3 cup Chopped walnuts
- Pinch of sea salt
- 2 - 3 tbsp Coconut oil (melted)
- 2 - 3 tbsp Raisin puree (See tips)
- 2 tsp Vanilla extract
- Choice of toppings: coconut chips, chia seeds, sunflower seeds or toasted sesame seeds.
Tips
- For the raisin puree, leave raisins to soak overnight in some water so that they soften, then blend with a little water to form a paste. Alternatively, you can use honey or agave syrup but bare in mind that this may add extra sweetness.
Method
- In a large bowl combine oat flour, carob powder, sea salt and walnuts together.
- Add coconut oil, 2 tbsp of the raisin puree and vanilla extract.
- Slowly combine them together using a wooden spoon. Taste for sweetness and add more raisin puree if necessary.
- Lightly oil your hands. Take a small part of the mixture and roll into a ball. If the mixture feels too dry and difficult to come together, add a couple more teaspoons of coconut oil/honey/agave syrup as they work as a binder.
- Roll remaining mixture into balls.
- Gently roll them in the toppings of choice so that they coat each ball.
- Store them in an airtight container in the refrigerator.
