Crispy Baked Polenta
Serves: 4 people
Prep time: 40 minutes
Ingredients

1 White onion (diced)
·
200g Polenta
·
3 Garlic cloves (roughly
chopped)
·
1 litre vegetable stock
·
1 tbsp Poppy seeds or Chia
seeds
·
Pinch of salt
·
Parsley to garnish
Method
1. Preheat the oven to 180c.
Place baking sheet in a small, deep tray.
2. Place a pan on medium heat
and add a drizzle of olive oil. Fry onion for a couple of minutes then add
garlic. Once the garlic starts to brown, remove from heat and add to a blender.
3. Add vegetable stock and
blend until well combined.
4. In a pot add the polenta, vegetable
stock and a pinch of salt and bring to boil. Stir constantly and lower to
simmer.
5. The polenta should begin to
thicken after about 5 minutes. Stir in seeds then once the liquid has properly dissolved,
transfer into baking tray.
6. Bake in the oven for 20 – 25
minutes until the top is nice and crisp. Let cool for 5 minutes then cut into
squares.
7. Garnish with parsley to
serve.
