Banana Pancakes

Banana pancakes 
  • 1 cup soy milk 
  • 1 tbsp apple cider vinegar (or lemon)
  • 1 cup spelt (or buckwheat) flour 
  • 1/2 tbsp bicarbonate of soda 
  • Large pinch of salt
  • Pinch of nutmeg
  • Pinch of cinnamon 
  • 1 banana, chopped 

Combine the soy milk and apple cider vinegar and set aside for a couple of minutes 
In a separate bowl combine the flour, bicarb., salt, nutmeg and cinnamon, then whisk in the soy milk to form your batter
When ready to cook, brush your pan with coconut oil and add a spoonful of the batter. Once tiny bubbles form, add the chopped banana and flip and continue to cook for a couple of minutes
