Cacao, orange & olive oil mousse
- 100g dark chocolate (at least 70%)
- 1 cup cacao or carob
- 3 tbsp molasses
- 1 tsp ground cardamom
- ½ cup of prunes
- Pinch of sea salt
- ½ cup olive oil
- ½ cup water or soy milk
- Zest and juice of 3 oranges
- ½ cup chickpea water
Place the chocolate and olive oil in a heatproof bowl over a simmering pan of water until the chocolate has melted. Once melted, add to a blender with all of the ingredients except the chickpea water and blend until you have a smooth consistency.
Whisk the aquafaba until fluffy, then gently fold through the blended chocolate mixture, pour into ramekins and chill for at least 2 hours.
Garnish with cocoa nibs, orange zest or orange segments.
