Soda Bread

Soda Bread 
500ml soy milk
2 tbsp apple cider vinegar
500g spelt flour 
150g jumbo oats 
10g salt
15g bicarbonate of soda 
2 tbsp molasses

Preheat your oven to 180°/356°/gas 4
Combine the soy milk and apple cider vinegar in a bowl and set aside for a couple of minutes until it’s curdled 
Combine the flour, oats, salt and bicarb. in a separate large bowl 
Line a baking tray with baking paper and dust it flour 
Stir the molasses into the soy milk, give it a good mix through until it’s combined 
Gently stir the wet mixture into the dry and bring the mixture together with your hands until you have a fairly wet dough, then shape it into a rough ball 
Transfer the dough to your tray and bake for 50 minutes or until it’s dark brown and hollow when you tap the bottom 
Once baked, rest a damp tea towel over the bread until it’s cool, this keeps it moist!
