Porridge - Buckwheat with roasted apples
Tipp: Yummy alternative grains
with roast apples are Millet (or mix Buckwheat & Millet) or Polenta
Instructions
- 500-700g Buckwheat (adapt to number of people) (soak overnight)
- 1-1.5l Boiling Water
- one Handful dried fruit (Dates, figs, raisins etc.)
- 3-5 Apples
- Pinch of Salt, Cinnamon
- Nut-, Seed- or Soy Milk
- Nuts or Seeds
- optional: a bit of stevia

Instructions
1.
Soak Dried
fruit with boiling water and put to the side
2.
Sieve the
Buckwheat & mix with boiling water in a pot
3.
Bring it to
boil on medium heat, cover with a lid & let it simmer for about 20 min
until all the water is absorbed & Buckwheat is soft
4.
Put a handful
nuts/seeds in the oven and roast for about 10 min
5.
In the meantime
cut the apples in small pieces & put in a pan with lit over medium heat
& wait until apples become soft- increase to high heat for some minutes
until apples are brown - mix in some cinnamon in the end
6.
Sweetener: Put
the dried fruits with a bit of the soaking water in a mixer until you get a
smooth texture
7.
Add the dried
fruit mix and a pinch of salt to the buckwheat over low heat, gradually add
some milk until the porridge has a smooth texture
8.
Put Porridge in
Serving Bowl, add the Cinnamon apples & garnish with cut toasted nuts/seeds
