Mango Sweet Rice

Preparation time: 10 minutes

Cooking time: 45-50 minutes

Makes 6-8 servings

 

Ingredients:

1 cup of preferably jasmine brown rice because of its naturally sweet taste (otherwise basmati brown rice or any other brown rice)

400 ml coconut milk

2 ½ cups oats milk

1 tablespoon maple syrup

Pinch vanilla extract

Pinch sea salt

5 saffron strands (optional)

Seeds of 2 cardamom pods

¼ cup raisins

2 mangos dices into small pieces

A handful goji berries – for garnish

Some mint leaves – for garnish

 

Preparation:

1.      Leave the rice to soak overnight, this will make it easier to cook and also remove any antinutrients from the rice.

2.      Rehydrate the goji berries in water for the duration that the other ingredients are cooking, then drain before using them as garnish.

3.      Drain the rice and rinse it through, then cook all the ingredients except for the garnish (mint leaves and goji berries) for 35-40 minutes in a saucepan. To do so bring it first of all to a boil and once it is boiling lower to a simmer.

4.      Once the rice has absorbed all of the liquid, taste it and add in some more vanilla, maple syrup or raisins according to your taste. Once it is tasty and the rice is cooked, switch off the heat and leave it to cool down for at least 10 minutes.

5.      Dish the mixture out into glasses, put the mango on top and garnish with the mint and the goji berries.

In India there are people who believe that mango trees can grant wishes. Mangos are actually the most commonly eaten fruit in the whole world and India is the biggest producer of mangos in the world. As its flavor is a mixture of orange, pineapple and peach flavors it is also called the “King of Fruits”.
