Healthy Bread Pakoras

Makes 3-4 servings
Ingredients:
1 cup chickpea flour – also known as besan in India
1 tablespoon brown rice flour
1 – 1 ¼ cups water
½ teaspoon Himalayan rock salt
½ inch fresh turmeric root grated / ¼ teaspoon turmeric powder
¼ teaspoon Cayenne pepper/chilli powder
1 teaspoon cumin seeds
1 white onion finely chopped
1-2 green chillies finely chopped (optional)
1 handful fresh chopped coriander leaves
1 tablespoon lemon juice
2 tablespoons olive oil (divided into various batches for shallow frying)
6 – 10 slices wholegrain bread
Preparation:
- Mix all the ingredients above up until and including the lemon juice to form the batter (initially take one cup of water and then check the constituency of the mixture to see if you need to add more).
- Cut the slices of bread in half.
- Dip the bread halves into the batter until each side is coated.
- Heat up some of the olive oil in a good quality non-stick frying pan on a medium to high heat. Once the oil is hot, add in the first batch of the bread pakoras. You should be able to fit in around 3-4 slices in one batch. Cook for about 3-4 minutes on each side until both sides of the bread pakoras are crispy. Repeat until all of the slices are cooked. Between each batch clean the pan with a paper towel to remove the crumbs and then add some more olive oil.
Where does your protein come from?
It comes from a mixture of the chickpea flour and the wholegrain bread. By combining chickpea protein and wholegrain bread such as spelt or kamut you get all of the essential amino acids that the body needs.
