Thai Inspired Mango Tofu Salad

Serves 1-2


Ingredients:

250g tofu (non-GMO) drained and cubed

1 – 1 ½ tablespoons sesame oil

6-8 lettuce leaves shredded

1 red cabbage leave shredded

½ cucumber sliced and cut into halves

1 tomato chopped

¼ carrot scrubbed well and grated

1 small handful of peanuts (toasted if you prefer)

½ mango diced

1 small handful of fresh coriander chopped

Sauce:

3 tablespoons creamy peanut butter

2 tablespoons white wine vinegar

1 tablespoon sesame oil

2 tablespoons tamari sauce

1 teaspoon maple syrup

1 chilli finely diced

1 garlic clove grated

Juice of ½ lemon (keep the fibre)

 

Preparation:

  1. Drain the tofu, either in a tofu press or with paper towels.
  2. Mix all of the sauce ingredients together and whisk.
  3. Marinade the tofu in about half of the sauce for 5-10 minutes, put the other half of the sauce aside for later to use as the salad dressing.
  4. Assemble the salad ingredients except for the tofu and sesame oil whilst the tofu is marinading. Dress with the rest of the sauce.
  5. Heat up the sesame oil in pan on a medium to high heat. Once hot put in one of the cubes of tofu and wait for it to start to sizzle. Then add in the rest of the tofu. Constantly stir and cook for about 6-10 minutes until the tofu cubes turn crispy on at least two sides.
  6. Add the tofu to the salad.

It comes from the tofu, the peanuts and the peanut butter all of which are good sources of protein.
