Bon Bon Bliss Balls

Serves 2-4 people
Ingredients:
Filling
1 ½ cups pitted dates
1 cup raw cashews
3 tablespoons cacao powder (ideally raw and Fairtrade)
½ teaspoon cacao nibs
½ teaspoon Himalayan rock salt
2 tablespoons almond butter
1 tablespoon oats milk
⅛ teaspoon vanilla powder
Coating
2 tablespoons cacao powder
3 tablespoons coconut oil
2-3 tablespoons maple syrup
1 pinch vanilla
Garnish
Desiccated coconut
Preparation:
- Blend the main ingredients together in a blender on a low setting for about a minute, pausing in between if needed to scrape down the sides.
- Take a glass container, lay some baking paper down on the bottom. Either take a 1 tablespoon measure or simply moisten your hands with water or olive oil and take a golf ball amount of the mixture and form into balls. Put the balls onto the baking paper. Do this until all the mixture is used. There should be enough mixture for about 10-12 balls.
- Leave in the fridge for about 20-30 minutes.
- Whilst the balls are in the fridge, mix together the ingredients for the coating (if the coconut oil is solid, heat it up in a saucepan for a minute or two).
- Take the balls out of the fridge now, dip them one by one into the coating mixture so that the whole ball is covered and put them back on the baking paper and into the same glass container. Put back into the fridge for another 5-15 minutes until the coating has solidified.
- Remove from the fridge and garnish with some desiccated coconut and serve.
