Broccoli and Tofu Toast

Serves 2



 

Ingredients:

A few drops of olive oil

400g tofu drained and sliced

5-6 broccoli florets sliced

 

Marinade

1 teaspoon hot paprika

1 teaspoon maple syrup

2 tablespoons tamari sauce

1/8 teaspoon black pepper

¼ teaspoon Himalayan rock salt

1 tablespoon sesame oil

1 teaspoon garlic powder

 

Preparation:

  1. Put all the ingredients for the marinade in a large glass container and stir thoroughly.
  2. Add in the tofu and the broccoli, put the lid on the container and shake it a few times so that the marinade spreads throughout the broccoli and the tofu. Keep the mixture in the fridge for about 5-10 minutes so that the flavour gets absorbed well.
  3. Take the mixture out of the fridge and shallow fry with the olive oil on a high heat for about 3-5 minutes on 2 sides until the tofu is nice and crispy. As soon as the tofu starts crispen, switch off the heat and serve the mixture on wholegrain bread with some more olive oil, some shredded lettuce, sliced tomato, sliced cucumber and some chopped fresh basil.

Where does your protein come from?

It comes from a combination of the tofu, which is a complete protein in itself and the wholegrain bread e.g. kamut, buckwheat, spelt.
