Cinnamon Spiced Adzuki Beans and Jasmine Rice

Soaking time: Overnight

Cooking time: 30 min – 1 hr

 

Serves 4-6.



Ingredients:

1 cup dry adzuki beans

1 cup wholegrain jasmine rice

2 large white onions diced

1 medium tomato diced

2-3 tablespoon olive oil

½ inch ginger grated

4 garlic cloves grated

½ inch fresh turmeric grated / ¼ teaspoon turmeric powder

4 cups vegetable stock

Spice mix

⅛ teaspoon Cayenne pepper

2 ½ teaspoons corriander powder

2 teaspoons garam masala

1 teaspoon cumin seeds

1 cinnamon stick

¾ teaspoon Himalayam rock salt

¼ teaspoon black pepper

 

Garnish with:

1 handful fresh coriander

Soya yoghurt (non-GMO)

 

Preparation:

  1. Soak the adzuki beans and the wholegrain jasmine rice overnight.
  2. Drain and rinse the adzuki beans and the jasmine rice.
  3. If you are using an Instant Pot turn on the sauté function.  If you are using a normal pan then just heat to a medium to high heat. Now add in some olive oil and add in one piece of the onion. Once it starts to sizzle add in all of the chopped onion, the chopped tomato and sauté until the tomato goes soft and the onion becomes translucent, stirring all the while. This takes about 4 to 5 minutes.
  4. Add in a little bit more oil, then add in the garlic, the ginger, the turmeric, the cumin seeds and the cinnamon stick. Cook for about 30 seconds, constantly stirring to make sure nothing burns.
  5. Add in the spices, the salt and the black pepper. Stir for another 30 seconds.
  6. Add in the adzuki beans and the vegetable stock, stir and cook for about 3-5 minutes so that the adzuki beans start to soften.
  7. Add in the brown jasmine rice and stir again. If you are using the Instant Pot, press the cancel function and then close the lid with the vent in the sealing position.
  8. Also if you are using the Instant Pot, cook on high pressure now for 8-10 minutes depending on how soft you want the adzuki beans to be and then wait for the natural release to happen. If you are using a normal saucepan cook for about an hour, stirring now and then.
  9. Check at the end to make sure the beans are soft enough and the rice is cooked. Cook for longer if needed. Fluff everything up with a fork and taste to see if you need to add in any more of spices, or any more salt or black pepper.
  10. Garnish with fresh coriander and the soya yoghurt.

Where does your protein come from?

It comes from a combination of the adzuki beans and the brown rice. Together they form a complete protein. Soya yoghurt, which you use as a garnish, is also a good source protein by itself, being a complete protein.
