Green and Silky Tofu Spaghetti

Serves 3-4 people



Ingredients:

150-200g wholegrain pasta of your choice

toasted pumpkin seeds for garnish

 

Mixture

1 white onion sliced

3 tomatoes sliced

5-6 garlic cloves, skin removed

1 large handful spinach leaves, stems removed

100g kale washed and shredded

250g silken tofu

⅓- ½ cup toasted pumpkin seeds

½ to 1 tablespoon red wine vinegar (according to taste)

2-3 teaspoons olive oil

⅛ teaspoon cayenne pepper

¼ teaspoon fresh ground black pepper

¼ - ½ teaspoon Himalayan rock salt (according to taste)

1 teaspoon dried basil

¼ teaspoon dried oregano

¼ - ½ teaspoon dried sage

¼ teaspoon dried thyme

 

Preparation:

  1. Cook the pasta according to the instructions qnd drain.
  2. Dry roast the pumpkin seeds (both those for the mixture and those for the garnish) for 1-2 minutes on a medium to high heat, constantly stirring so that they do not burn. Once they are toasted put them aside onto a plate.
  3. Heat up a little bit of oil in a pan with one piece of the onion. Once it starts to sizzle, add in the rest of the onion and the tomatoes. Cook for about 5 minutes or so until the onion becomes translucent and the tomato starts to soften.
  4. Now put in the kale and the vinegar. Cook for another 2 minutes, constantly stirring.
  5. Next add in the garlic with some more oil, cook for another 30 seconds.
  6. Add in the spinach, the herbs, the salt, the black pepper and the cayenne pepper with some more oil. Cook for another 4 minutes, stirring occasionally until the spinach has wilted.
  7. Now add in all the ingredients of the mixture (keeping some of the pumpkin seeds aside for the garnish) into a blender and blend for about 30 seconds on a high setting. Taste and see if you need to add any more herbs, cayenne, salt or pepper.
  8. Serve on top of the wholegrain pasta and garnish with the toasted pumpkin seeds.
