 Sweet and Sour Chickpea and Butternut Squash Curry

Serves 4 people


Ingredients:

2-3 tablespoons olive oil

1 chilli diced

2 teaspoons mustard seeds

1 teaspoon black cumin seeds (nigella seeds)

2 teaspoons cumin seeds

1 teaspoon fenugreek seeds

¾ inch fresh turmeric grated/ ½ teaspoon turmeric powder

1 small to medium butternut squash diced

½ large/1 small sweet potato diced

1 cup dried chickpeas left to soak overnight / 1 jar (400-500g) chickpeas drained and rinsed

2 teaspoons coriander powder

2 teaspoons garam masala

¾ teaspoon Himalayan rock salt

3 cups vegetable stock

¾ cup raisins

 

Preparation:

  1. Heat the oil to a medium to high heat.
  2. Add in all of the seeds, the chilli and the turmeric. Cook for about a minute on a medium to high heat, stir constantly to make sure nothinh burns. (If you are using an instant pot, use the sauté function)
  3. Now add in the diced butternut squash, the sweet potato, the spices and the salt. Cook for about 2-3 minutes stirring constantly.
  4. Add in the dried chickpeas, the vegetable stock and the raisins. Cook for about an hour until the chickpeas have become soft. If you use chickpeas from a jar, reduce to a low to medium heat for about 30 minutes  stirring occasionally. (If you use and instant pot, place the valve on seal and cook on high pressure for 20 minutes. Then wait for the natural release to happen with the seal.)
  5. Taste the mixture, make sure the chickpeas are nice and soft and add in any more of the spices you want to in order to get the most flavour out of the dish.
  6. Serve with any wholegrain flatbread that you want to or basmati brown rice.

It comes from the chickpeas which are a good protein source. Combinig this curry with any wholegrain bread or rice will give you the entire compliment of essential amino acids that your body needs.
