Tofu and Greens Stir Fry

Serves 2-4
Ingredients:
300g broccoli - broken down into florets
75g green beans
400g tofu drained and cubed
1 tablespoon olive oil
1 tablespoon sunflower oil
1 tablespoon tamari
Sauce
1 teaspoon maple syrup
1 tablespoon arrowroot powder
1 teaspoon lemon juice
1 tablespoon garlic powder
¼ cup peanuts
1-2 chillis finely diced (take out the seeds if you want the dish to be less spicy)
1 tablespoon red wine vinegar
2 tablespoons tamari
⅓ cup vegetable stock
Garnish with toasted sesame seeds
Preparation:
- Heat up the sunflower oil and the olive oil on a medium to high heat in a pan with one cube of the tofu. Once it starts to sizzle add in the rest of the tofu, the green beans and the broccoli. Add in the tamari as well and stir constantly for about 5-10 minutes, so that the tofu becomes crispy on at least two sides.
- Mix together all the ingredients for the sauce together in a small bowl. Once the tofu is crispy, add the sauce to the tofu and greens mixture. Stir and cook for about 1-2 minutes until the sauce becomes nice and thick.
