Fusion Chard and Tofu

Serves 2 people
Ingredients:
2 ½ teaspoons ras el hanout spice mix
2 tablespoons nutritional yeast
2 ½ tablespoons tamari sauce
1 ½ teaspoons garlic powder
1 ½ teaspoons onion powder
2-3 teaspoons sesame oil
1-2 teaspoons olive oil
400g tofu drained and cubed
70-75g fresh Swiss chard (shredded if you want to)
1 cup frozen green beans defrosted
Preparation:
- Drain and dice the tofu.
- Defrost the green beans in some boiling water.
- Heat up some of the sesame oil in a wok on a medium to high heat and add in one piece of tofu, wait for it to start to sizzle. Once it starts to sizzle add in the rest of the tofu plus 1 tablespoon of tamari sauce and 1 ½ teaspoons of the ras el hanout spice mix. Cook for about 5 minutes until the tofu becomes crispy.
- Add in the chard the green beans, the olive oil, the onion and garlic powders, the rest of the tamari sauce, the nutritional yeast and the rest of the ras el hanout spice mix. Cook for about 1 ½ minutes until the chard starts to wilt. Taste to see if anything needs adding.
- Serve with brown jasmine rice, brown basmati rice, soba noodles or with quinoa.
- Garnish with some toasted sesame seeds if you want to.
