Chilli Tofu

Chilli Tofu

Preparation time: 15-20 min

Cooking time: 20 min

 

Serves 4-6 people.


Ingredients:

2 tablespoons tamari sauce

2 teaspoons tikka masala or use garam masala if tikka masala is unavailable

2 ½ teaspoons cumin powder

400g tofu drained and cubed

1 medium zucchini cut into strips

200g mushrooms whole or sliced

 

Sauce

6 tablespoons arrowroot powder

5 garlic cloves grated

1 inch ginger grated

1-2 chillies diced

4 tablespoons tamari sauce

½ teaspoon hot paprika

1 ½ cups water

2 teaspoons maple syrup

6-7 tablespoons tomato puree

 

1-2 tablespoons sesame oil for shallow frying

1-2 teaspoons olive oil also for shallow frying

 

Garnish with fresh chopped coriander and toasted sesame seeds

 

 

Preparation:

  1. Use a large wok snd bring to a high heat. Add in some of the olive oil and some of the sesame oil together with one piece of the tofu. As soon as it starts to sizzle add in the rest of the tofu, all of the mushrooms, the zucchini, the tamari sauce, the tikka masala/garam masala and the cumin powder. Constantly stir for about 10-15 minutes until the tofu has become crispy.
  2. Whilst it is cooking make up the sauce mixture in a bowl.
  3. Once the tofu has become crispy lower to a medium heat and add in the sauce. Stir constantly and cook for about 3 minutes until the sauce is nice and thick.
  4. Serve with either quinoa or brown jasmine rice. Also really tasty by itself.
