 Curry Powdered Scrambled Tofu

Preparation time: 10 min

Cooking time: 10-15 min

 

Serves 2-3 people.



Ingredients:

1 ½ tomatoes finely chopped

5 mushrooms sliced

1 green chilli chopped finely (deseeded if you want to decrease the heat)

½ inch fresh turmeric grated / ¼ teaspoon turmeric powder

½ teaspoon black cumin seeds (nigella seeds)

400g tofu drained and scrambled with a fork

¼ teaspoon ground black pepper

1 teaspoon curry powder (use garam masala if you do not have curry powder)

10-15 dry curry leaves / 5 fresh curry leaves

3 tablespoons tamari sauce

Olive oil for shallow frying

 

1 ½ teaspoons garlic powder

3 tablespoons nutritional yeast

 

 

Garnish with some chopped chives

 

Preparation:

  1. Heat up some olive oil on a high heat in a wok and add in the mushrooms and the tomatoes. Cook for about 5 minutes and stir until they both become soft.
  2. Add in the green chilli, the turmeric and the black cumin seeds with a little bit more of the oil. Stir constantly for about 30 seconds.
  3. Add in the tofu, the black pepper, the curry powder/garam masala, the curry leaves and the tamari sauce. Cook and stir for another 5 minutes.
  4. Now add in the nutritional yeast and the garlic powder. Cook for around 30 seconds to a minute. Taste and see if you need any more curry powder/garam masala, black pepper, turmeric or tamari sauce.
  5. Garnish with some chopped chives.

 

Did You Know?

It is good to combine turmeric with black pepper as you absorb more of the potent antioxidant curcumin (which seems to slow down the onset of several chronic diseases) from the turmeric when you have it with black pepper.
