Ginger Spinach Tofu Tacos

Serves 4 people.
Ingredients:
1-inch fresh ginger finely minced (keeping the peel on)
4 ½ tablespoons tamari sauce
½ - 1 teaspoon hot paprika (depending on how spicy you want it)
4 teaspoons cumin powder
1 teaspoon cumin seeds
¼ teaspoon ground black pepper
4 ½ teaspoons onion powder
6 tablespoons nutritional yeast
800g tofu drained and cubed
1 carrot diced or julienned (keep the peel on and scrub finely)
125g shitake mushrooms sliced
½ head broccoli broken into florets
100g kale (stems removed) shredded
1 ½ tablespoons sesame oil
½-1 tablespoon olive oil
1 small handful spinach shredded
Preparation:
- In a large wok heat up some of the sesame oil on a high heat with one of the pieces of tofu. As soon as it starts to sizzle add in all of the tofu and cook for about 4-5 minutes constantly stirring until it starts to become crispy.
- Add in some of the ginger and some more of the sesame oil. Cook for about 30 seconds until the aroma is released.
- Now add in the cumin seeds and some more of the sesame oil. Cook for about 30 seconds more.
- Add in the spices i.e. the cumin powder, paprika and black pepper with one tablespoon of the tamari and some more of the sesame oil. Stir through for 30 more seconds.
- Now add in the kale, the carrots, the shitake mushrooms and the broccoli as well as some of the olive oil and 1 more tablespoons of tamari. Stir through and cook for about 5-6 minutes until it looks like the vegetables have started to become crispy.
- Add in the spinach, some more olive oil, the onion powder, the nutritional yeast and the rest of the tamari. Switch off the heat and keep on mixing for about a minute or so until the spinach starts to wilt.
- Serve with any wholegrain tacos, corn tacos, brown rice or quinoa.
- Garnish with some fresh chopped coriander.
