Vegan Thai Pad Krapow

Serves 2 people.



Ingredients:

Main ingredients

250g tofu drained and cubed

1-2 teaspoons avocado oil or substitute with olive oil if avocado oil not available

1 large red pepper sliced

1 cup frozen green beans defrosted/fresh green beans with ends trimmed off

½ cup frozen peas defrosted

1 medium sized white onion sliced

¼ teaspoon ground black pepper

3 tablespoons nutritional yeast

2 tablespoons tamari

 

Paste

2 tablespoons tamari

2 teaspoons maple syrup

4 garlic cloves grated

½ - ¾ inch fresh ginger grated

¼ teaspoon Cayenne pepper/chilli powder (optional)

1 chilli finely chopped (optional)

Juice of ½ lemon

1 teaspoon sesame oil

2 tablespoons brown rice vinegar

 

Garnish with 1 handful thai basil/normal basil - chopped and stalks removed

 

Preparation:

  1. Drain the tofu with a tofu press or some paper towels. Crumble the tofu with a fork.
  2. Heat up some of the oil on a medium to high heat. Put in a tiny bit of the tofu and as soon as it starts to sizzle add in the rest of the tofu, the black pepper and two tablespoons of the tamari sauce. Constantly stir for about 5 minutes until crispy.
  3. Whilst the tofu is cooking, chop up the red pepper, the onion and trim the ends of the beans if using fresh. Defrost the frozen peas and beans if using frozen. Mix together the ingredients for the paste. Add some more oil to the paste if it is needed.
  4. As soon as the tofu becomes crispy add in the paste, the vegetables and the onion and cook for about 5-10 minutes until you get the texture you want. Do not allow the vegetables to become too soft.
  5. Switch off the heat and add in the basil and the nutritional yeast. Stir for another few seconds.
  6. Serve with brown jasmine rice.

 

Where does your protein come from?

It comes from a combination of the tofu and the nutritional yeast both of which are complete protein sources and both of which are high in protein. Brown rice adds an extra compliment of amino acids to the meal.
