Creamy and Spicy Tofu Pasta

Preparation time: 10-15 min
Serves 2-4 people.
Ingredients:
150-200g of any wholegrain pasta of your choice
1 ½ cups frozen vegetables (defrosted) e.g. spinach, broccoli, sliced bell peppers, peas or green beans
Sauce
250g silken tofu
3 garlic cloves (skin removed)
1 tablespoon apple vinegar
2 ½ tablespoons tomato puree
2 teaspoons onion powder
1 teaspoon cumin powder
1 teaspoon hot paprika
½ inch fresh turmeric roughly chopped / ½ teaspoon turmeric powder
1 teaspoon wholegrain mustard
1 cup oat milk
3 tablespoons nutritional yeast
Juice of 1 small lemon including the fibre
Preparation:
- Cook the pasta according to the instructions and drain.
- Defrost the frozen vegetables with boiling water.
- Blend the ingredients for the sauce mixture on a fast setting for around 1 minute.
- Serve the mixture on top of the drained pasta.
- Top with the defrosted vegetables.
Where does your protein come from?
It comes from a mixture of the tofu, the nutritional yeast and the wholegrain pasta all of which are good sources of protein.
