Easy Chickpea Boats

Cooking time: 25-30 minutes
Serves 4-6 portions.
Ingredients:
Chickpea mixture
1 cup dried chickpeas / 1 jar (400g) cooked chickpeas
¼ teaspoon ground black pepper
½ teaspoon Himalayan rock salt
2 teaspoons cumin powder
2 teaspoons coriander powder
1 teaspoon ginger powder
½ teaspoon nigella seeds
2 teaspoons sumac powder (optional)
1 cup raisins
⅛ teaspoon cayenne pepper or chilli powder
2 tablespoons olive oil
2 tablespoons tamari sauce
Ingredients for baking
2 vine tomatoes diced
2 large or 4 small aubergines halved
1 large or 2 small courgettes halved
2 tablespoons olive oil
Some sea salt to sprinkle on top
Preparation:
- Leave the chickpeas to soak overnight, then drain and rinse them next day and cook them in an Instant Pot for about 20 minutes or in a pressure cooker according to the instructions. Otherwise use the cooked chickpeas and rinse and drain them.
- Preheat the oven to 180° C. When the oven is warm add the vine tomatoes and the aubergines to two large baking trays which have been well oiled on the bottom. Sprinkle more of the olive oil and the sea salt on top of the tomatoes and aubergine and bake for about 15 minutes. Now remove the baking trays and add in the courgettes. Add back to the oven and bake for another 20 minutes until the aubergines and the courgettes have become soft.
- Whilst you are waiting for the ingredients in the oven to heat up, combine all of the ingredients for the chickpea mixture together including the cooked chickpeas. Warm on a medium to high heat in a pan for about 6-8 minutes until the chickpeas become crispy.
- Remove the aubergine and courgette halves from the oven and serve into individual plates. Spoon some of the chickpea mixture on top and add on the roasted tomatoes.
