 Paprika Cauliflower and Tofu

Preparation time: 20 min

Cooking time: 10-15 min

 

Serves 2-4 people.



Ingredients:

1 small cauliflower / ½ large cauliflower broken down into florets

400g tofu drained and cubed

100-150g mushrooms sliced

1 Small handful of spinach shredded

A few drops of sesame oil for cooking

 

Marinade

⅛ teaspoon black pepper

½ teaspoon hot paprika

¼ teaspoon sweet paprika

½ teaspoon turmeric powder

4 tablespoons tamari sauce

10 tablespoons water

2 tablespoon sesame oil

2 teaspoons garlic powder

3 teaspoons onion powder

 

 

 

Garnish with 1 handful of fresh coriander chopped, 1 handful of mint chopped and some toasted sesame seeds

 

Preparation:

  1. Drain and cube the tofu.
  2. Break down the cauliflower into florets and slice the mushrooms. Shred the spinach.
  3. Mix together the marinade ingredients.
  4. Marinade the diced tofu, the cauliflower and the mushrooms in a large bowl. Leave for at least 5 minutes (ideally for longer if possible).
  5. Heat up the drops of sesame oil on a medium to high heat in a large wok with one piece of the tofu. As soon as it starts to sizzle add in all of the marinated mixture and cook for about 10-15 minutes until the cauliflower becomes soft and the tofu becomes slightly crunchy. Stir constantly.
  6. Switch off the heat and add in the spinach. Mix through and wait for it to start to wilt.
  7. Garnish with the sesame seeds, the fresh coriander and the fresh mint.
