Paprika Cauliflower and Tofu

Cooking time: 10-15 min
Serves 2-4 people.
Ingredients:
1 small cauliflower / ½ large cauliflower broken down into florets
400g tofu drained and cubed
100-150g mushrooms sliced
1 Small handful of spinach shredded
A few drops of sesame oil for cooking
Marinade
⅛ teaspoon black pepper
½ teaspoon hot paprika
¼ teaspoon sweet paprika
½ teaspoon turmeric powder
4 tablespoons tamari sauce
10 tablespoons water
2 tablespoon sesame oil
2 teaspoons garlic powder
3 teaspoons onion powder
Garnish with 1 handful of fresh coriander chopped, 1 handful of mint chopped and some toasted sesame seeds
Preparation:
- Drain and cube the tofu.
- Break down the cauliflower into florets and slice the mushrooms. Shred the spinach.
- Mix together the marinade ingredients.
- Marinade the diced tofu, the cauliflower and the mushrooms in a large bowl. Leave for at least 5 minutes (ideally for longer if possible).
- Heat up the drops of sesame oil on a medium to high heat in a large wok with one piece of the tofu. As soon as it starts to sizzle add in all of the marinated mixture and cook for about 10-15 minutes until the cauliflower becomes soft and the tofu becomes slightly crunchy. Stir constantly.
- Switch off the heat and add in the spinach. Mix through and wait for it to start to wilt.
- Garnish with the sesame seeds, the fresh coriander and the fresh mint.
