Easy Goji Berry Breakfast Bowl

Preparation time: 5-10 minutes

Refrigeration time: 15 minutes

 

Serves 1 portion

Ingredients:

1 ½ cups soya yoghurt

2 pinches vanilla powder

2 teaspoons maple syrup

1 teaspoon rooibos tea leaves

3 tablespoons dried goji berries

1 tablespoon chia seeds

 

Toppings

Pomegranate seeds

More dried goji berries

 

Preparation:

  1. Mix together the main ingredients. Leave in the fridge for about 15 minutes so that the chia seeds can gel up.
  2. Top with the pomegranate seeds and more goji berries.

 

Did you know?

This breakfast is an antioxidant bomb. The rooibos leaves contain a high amount of antioxidants as do the goji berries.

 

Also chia seeds are a very good source of omega 3 and 6 oils.

Where does your protein come from?

It comes mostly from chia seeds and soya yoghurt. However goji berries also contain several amino acids.
