Easy Tofu Ginger Burgers with Mushrooms

Preparation time: 5-10 minutes

Marinading time: at least 5 minutes

Cooking time: 15-20 minutes

 

Serves 3-4 portions. Makes 8 burgers



Ingredients:

25g mushrooms sliced

800g tofu drained and cut into 8 blocks

Olive oil for cooking

 

Marinade

2 tablespoons tamari sauce

2 ½ tablespoons sesame oil

1 ½ tablespoons brown rice vinegar (substitute with white wine vinegar if brown rice vinegar not available)

¾ inch ginger grated

¼ teaspoon hot paprika

¾ teaspoon sumac (optional)

¼ cup mineral water

1 chilli, deseeded to decrease the heat if desired

 

Serve with wholegrain buns, some greens (such as lettuce or watercress), sliced tomato and fresh coriander. The coriander really adds to the flavour.

 

Preparation:

  1. Drain the tofu.
  2. Cut the tofu into 8 blocks. Slice the mushrooms.
  3. Mix together the ingredients for the marinade.
  4. Marinade the tofu blocks and the mushrooms for 5 minutes at least or for longer if you have time. The longer you leave to marinade, the longer the tofu and the mushrooms have to absorb the flavours.
  5. Heat up some of the oil on a medium to high heat. Cook 2-3 burgers at a time plus some of the mushrooms. Cook for about 3 minutes on each side. This allows the mushrooms to cook for 6 minutes in total and hence for the naturally occurring formaldehyde to become denatured (see below). It also allows for the burgers to become crispy on each side. Repeat this step around 3 times until all the burgers and mushrooms are ready.
  6. Serve the tofu burgers with the mushrooms on the wholegrain buns. Add on the sliced tomato, the greens and the fresh coriander.

 

 

Did you know?

Mushrooms naturally contain formaldehyde. One study showed that if you cook them for at least 6 minutes, you denature the formaldehyde.
