Easy Vegan Curry Madras Inspired Tofu Paneer

Serves 4 portions
Ingredients:
½ to 1 tablespoon olive oil
½ to 1 tablespoon sesame oil
800g tofu drained and cubed
1 red pepper diced
1 carrot diced
50g Swiss chard leaves (optional)
½ cup frozen peas defrosted
70g frozen spinach defrosted
3 tablespoons tamari sauce
1 teaspoon coriander seeds
½ teaspoon cumin seeds
1 teaspoon fenugreek seeds (optional)
¼ teaspoon ground black pepper
1 tablespoon curry madras spice mixture (or garam masala if you need to substitute)
1 teaspoon coriander powder
Up to 2 chillies finely diced (remove the seeds if you want less heat)
1 ½ teaspoons garlic powder
1 ½ teaspoons onion powder
3 tablespoons nutritional yeast
Garnish with: fresh chopped coriander
Preparation:
- Drain and dice the tofu.
- Cut the vegetables and defrost the frozen peas and the frozen spinach in boiling water.
- Dry roast the cumin and the coriander seeds for 1-2 minutes on a medium to high heat in a large wok, stirring constantly to make sure they do not burn.
- Now add in some of the mixture of the 2 oils, the tofu, the red pepper, the carrot, the curry madras powder, 1 tablespoon of the tamari sauce, the fenugreek seeds if using, the coriander powder and the diced chillies. Keep stirring and cook for at least 7-10 minutes until the tofu starts to become crispy.
- Add in the final 2 tablespoons of the tamari sauce, the garlic powder, the onion powder and the nutritional yeast with some more of the oil mixture and also add in the defrosted peas and spinach plus the chard leaves if using. Stir through and cook for about a minute. Switch off the heat.
- Taste to see if you want to add in any more of the nutritional yeast, the garlic powder, the onion powder, the curry madras, the tamari sauce, any more chilli or any more black pepper.
- Garnish with some fresh chopped coriander.
- Serve with some spiced quinoa if you want to. (See our blog for ideas)
