Fig and Melon Breakfast

Preparation time: 15-20 minutes
Serves 1-2 portions
Ingredients:
1 fresh melon sliced in half (seeds scooped out but keep the flesh)
Filling
2 tablespoons goji berries
1 cup non-GMO soya yoghurt
2 tablespoons chia seeds
1 tablespoon desiccated coconut
1 tablespoon maple syrup
8 walnuts broken into small pieces
Toppings
2 figs diced
More desiccated coconut
Preparation:
- Mix together the filling ingredients. Leave in the fridge for about 15 minutes so that the chia seeds can gel up.
- Whilst the chia seeds are expanding cut the melon into 2 halves, scoop out the seeds from the centre of each half but keep the flesh.
- Once the filling mixture is ready spoon it into the scooped out section of each melon half. Top with the chopped figs and some desiccated coconut.
