Fig and Melon Breakfast

Preparation time: 15-20 minutes

 

Serves 1-2 portions



Ingredients:

1 fresh melon sliced in half (seeds scooped out but keep the flesh)

 

Filling

2 tablespoons goji berries

1 cup non-GMO soya yoghurt

2 tablespoons chia seeds

1 tablespoon desiccated coconut

1 tablespoon maple syrup

8 walnuts broken into small pieces

 

Toppings

2 figs diced

More desiccated coconut

 

Preparation:

  1. Mix together the filling ingredients. Leave in the fridge for about 15 minutes so that the chia seeds can gel up.
  2. Whilst the chia seeds are expanding cut the melon into 2 halves, scoop out the seeds from the centre of each half but keep the flesh.
  3. Once the filling mixture is ready spoon it into the scooped out section of each melon half. Top with the chopped figs and some desiccated coconut.
