Kids Approved Pasta Sauce

Serves 6 portions



Ingredients:

400g wholegrain spaghetti or pasta (perfect with wholegrain spelt pasta)

 

Sauce

Olive oil for baking

1 large red pepper roughly chopped

1 green pepper roughly chopped

2 large ripe tomatoes roughly chopped

1 white onion roughly chopped

4 garlic cloves roughly chopped

¾ cup almonds, soaked in boiling water

¾ cup oat milk

½ teaspoon dried parsley

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon dried thyme

2 teaspoons balsamic vinegar

1 ½ tablespoons tamari sauce

4 tablespoons nutritional yeast

¼ teaspoon sea salt

¼ teaspoon black pepper

10-20g fresh basil, stems removed

½ green chilli deseeded

 

Garnish with some chopped fresh basil

 

Preparation:

  1. Cook the pasta according to the package instructions until it is al dente. Preheat the oven to 180°C and soak the almonds in boiling water for 20 minutes.
  2. Whilst the pasta is cooking, roughly chop the peppers, tomatoes, onion and garlic. Once the oven is hot, add the peppers and the tomatoes into a large baking dish spreading olive oil both on the base of the tray and on the tomatoes and peppers. Bake for about 20 minutes.
  3. Now take the dish out from the oven, add in the onion and the garlic plus some more olive oil on top. Put the dish back in and cook for another 15 minutes until everything has started to soften.
  4. Drain and rinse the almonds (keep the skin on). Add the almonds and all of other ingredients to a blender including the ones from the baking dish plus the juice that has collected from them onto the baking dish itself. Blend on a high speed for about 1 minute until everything has become nice and homogenous.
  5. Taste the sauce to see if you want to add any more black pepper, salt, herbs, nutritional yeast, tamari sauce or balsamic vinegar. Once you are happy with the flavour, mix through and add to the al dente pasta.
  6. Leave now for another minute so the pasta can absorb the flavours of the sauce. It does this best when it is all dente.
  7. Garnish with some chopped fresh basil.

 

Where does your protein come from?

It comes from a combination of the almonds, the nutritional yeast and the wholegrain pasta, all of which are good sources of protein.
