Lemon Spiced Tofu
Lemon Spiced Tofu

Serves 2 portions
Ingredients:
2 tablespoons olive oil
400g tofu drained and cubed
100g cherry tomatoes halved
½ teaspoon nigella ( i.e. black cumin) seeds
¼ teaspoon ground black pepper
1 ½ tablespoons tamari sauce
1 ½ teaspoons garlic powder
1 ½ teaspoons onion powder
1 teaspoon coriander powder
1 green chilli finely chopped (deseeded if you want it to be less spicy)
½ green pepper diced
1 small handful spinach shredded
Juice of ½ to 1 lemon (according to your taste) including the fibre
2 pinches lemon zest
Preparation:
- Drain and cube the tofu and chop the cherry tomatoes, green pepper and chilli.
- Heat up some of the olive oil with one piece of the tofu in a wok on a medium to high heat. As soon as the tofu starts to sizzle add in the rest of the tofu, the black pepper, half of the tamari, all of the coriander powder and the nigella seeds. Stir and cook for about 4 minutes.
- Add in the cherry tomatoes, the chilli, the lemon zest some more of the oil and stir and cook for about 4-5 minutes until the tofu becomes crispy.
- Now add in the garlic and the onion powder, the other half of the tamari, the shredded spinach, the rest of the olive oil and the lemon juice. Cook for about 30 seconds to a minute, stirring constantly until the spinach starts to wilt. Switch off the heat, taste and see if you need to add in any more tamari, onion powder, garlic powder or ground black pepper. Once the taste is according to your liking the lemon spiced tofu is ready to serve.
