North African Spiced Spaghetti
North African Spiced Spaghetti

Cooking time: 15-20 minutes
Serves 2-4 portions
Ingredients:
150-200g any wholegrain spaghetti (goes well with kamut spaghetti)
2-3 tablespoons olive oil
1 white onion diced
3 garlic cloves grated
3 tomatoes chopped
200g tomato purée
½ cup vegetable stock
1 teaspoon cinnamon powder
⅛ teaspoon cayenne pepper
2 teaspoons cumin powder
¼ teaspoon ground black pepper
½ inch fresh turmeric grated/ ¼ teaspoon turmeric powder (if you do not have fresh turmeric available)
⅓ cup raisins
90g almonds toasted
7 dates pitted and finely chopped
Garnish with fresh mint/coriander chopped
Preparation:
- Cook the spaghetti according to the instructions.
- Dry roast the almonds in a pan on a high heat for 2-3 minutes, stirring constantly to make sure they do not burn. Once cooked place them to the side.
- Heat up some of the olive oil adding also one piece of the onion to the same pan that you used for step 2. Turn up to a high heat. Once the piece of onion starts to sizzle add in the rest of the onion and the tomatoes. Cook for 4-5 minutes until the onion becomes translucent and the tomatoes become soft.
- Add in the garlic and the turmeric together with a little bit more of the olive oil. Cook for about 30 more seconds, stirring constantly, until the aroma is released.
- Now add in the tomato purée, the spices, the raisins, the dates, some more of the olive oil and the vegetable stock. Lower the heat, stir well and cook for about 4-5 minutes.
- Taste to see if you want to add any more spices or black pepper or if you want to add in any Himalayan rock salt.
- Serve into plates. Pour the sauce over the spaghetti and add on the roasted almonds and the fresh chopped mint or coriander for garnish.
