White Bean Hummus

 

White Bean Hummus

Preparation time: 15-20 minutes

 

Serves 6 portions



Ingredients:

1 teaspoon sumac powder

1 teaspoon coriander powder

1 teaspoon wholegrain mustard

1 jar (600g) white beans rinsed and drained

2 tablespoons water (more if you want more of a liquid constituency)

¼ teaspoon Himalayan rock salt

1 teaspoon onion powder

1 teaspoon garlic powder

Juice of 2 lemons including the fibre

2 tablespoons olive oil

⅓ cup wholegrain tahini

 

Garnish with olive oil, paprika, fresh coriander and some of the white beans (optional)

 

Preparation:

  1. Blend all the ingredients together for about 1-2 minutes on a medium to fast setting, pausing to scrape down the sides if you need to. Alternatively you can use the pulse function of your blender if it has one and pulse about 10 times.
  2. Garnish with olive oil, paprika, coriander and some of the white beans if desired.
  3. Serve with wholegrain pitta bread or any other wholegrain bread.
