Decadent Chocolate Quinoa Breakfast

Soaking time: Overnight

Preparation time: 5 minutes

Cooking time: 20 minutes

 

Serves 2 portions



Ingredients:

Cooking pot ingredients

1 cup quinoa (preferably mixed quinoa – black, white and red)

1 ¼ cup oat milk if you are using an Instant pot/ 2 cups of oat milk if you are using a normal pan

1 pinch sea salt

1 handful raisins

 

Final stage ingredients

2 tablespoons raw cacao

2 tablespoons cacao nibs

2 teaspoons maple syrup

2 tablespoon desiccated coconut

2 tablespoons olive oil

 

Garnish with some dark chocolate pieces

 

Preparation:

  1. Soak the quinoa overnight. Rinse and drain the next day. Rub through well with your fingers to remove any bitter saponins.
  2. If using an Instant pot mix together the cooking pot ingredients i.e. the salt, the rinsed and drained quinoa, the oat milk and the raisins. Close the lid and set the valve to the seal position. Cook for one minute and wait for the natural release to happen. If you are using a normal pan cook the same ingredients for 15 minutes and stir through. Check to make sure the quinoa is cooked.
  3. Mix in the final stage ingredients, taste and see if you need to add in any more of the maple syrup, the desiccated coconut or cacao.
  4. Garnish with some chocolate pieces and serve.

 

Did you know?

Quinoa contains oxalates. Oxalates are beneficial in small quantities because they act as antioxidants and are therefore good for long-term health. In large amounts however they cause a decrease in your absorption of calcium. By leaving the quinoa to soak in water overnight and then rinsing through we decrease the oxalate content.

It comes from the quinoa which is a complete protein and has all of the essential amino acids that the body needs.
